[VEGETARIAN]

This is a tomato lentil stew with a hint of chilli (that's optional).

Recipe-

Soak 2 cups of red lentils all day. Drain and rinse well. Fry one onion and 3 cloves garlic in a little olive oil. Add 1 heaped tbsp tomato paste and cook for 1 min. Pour in one bottle of tomato passata sauce, 2 chopped tomatoes, 1 tbsp capers, 1 tsp chilli flakes, lentils (don't salt until lentils are cooked!), oregano fresh or dried, 2 cups water. Cover and cook over low heat stirring often until lentils soften- add more water if it becomes too thick before they are soft.

Serve topped with macadamia 'feta', olives, chilli flakes, vegan basil pesto and fresh basil. So tasty!
